New paper available!
We begin the new year with exciting news! Check out our recent paper about the aqueous behavior of D-allulose in comparison to its two isomers, D-glucose and D-fructose, investigated by molecular dynamics simulations for the first time. Our findings enhance the understanding of structure-activity relationships of sugars at the molecular level and aim to inspire further research into the complex inter-/intramolecular interactions that influence the engineering properties of food systems that incorporate sugars.
